One thing that always struck me about Singaporeans was that they are very good at researching. I think it is untrue to say Singaporeans do not care about authenticity - the ones that care for their craft study it to the utmost. This is the case with Chef Chris at Relish.sg. He ordered in Pimento Wood to smoke the Suka Suka marinated Jerk Chicken in a way that would prepare the dish with the most Caribbean authenticity.
We invited a small but mixed group of our friends of all ethinicities and walks of life, to come taste test Suka Suka as prepared by Relish.sg's kitchen. The results were delicious.
