Classic Suka Suka Jerk Chicken - Step by Step

Founder of Suka Suka Sauce and Artist, Masia One, shares her way of preparing a Jamaican classic: Jamaican Jerk Chicken. This recipe makes a meal for 4 pax.

What you'll need:
1 Lime
1 Onions
2 Cloves of Garlic
Chilli Padi / or Scotch Bonnet Pepper (if available in your region)
4 tablespoons of Suka Suka Sauce (1 tbsp.. per portion of meat)
4 Chicken Breasts / or Chicken Chop
Slice limes into wedges and "scrub" each chicken breast with the lime wedge, squeezing the lime periodically to ensure the juice saturates the skin of the chicken.
Chop up onions, garlic and chilli and combine with lime cleaned chicken.
Add 4 heaping tablespoons of Suka Suka Sauce to the chicken and marination. Let this mix sit for 10 min, or marinate overnight for extra flavour.
Place marinated chicken breasts skin side up in the oven, and begin roasting on med. heat.
Once the breasts are thoroughly cooked, brush the drippings on the skin and set on broil until crip.
Serve with Rice & Peas, coleslaw or corn. Enjoy!
Everyone has their own way of making this Caribbean favourite. I prefer my jerk chicken savory, smokey and spicy. Other versions may be sweeter, closer to American BBQ. Play around with the Suka Suka Sauce and create your own version unique to your taste palette.
